Pumpkin energy balls

Here is the next Halloween recipe I promised you after the delicious pumpkin chocolate rice crispy treats. As you can tell, we take Halloween very seriously. Our fridge is stocked with healthy treats for the big day, and our costume has been in production for the last month. I can't yet share what it will be, because we need to make sure it actually works :-). But here is our costume from last year. Baby Zand's favorite song at the time was "The wheels on the Bus". Spiced pumpkin and apple butter from the slow cooker

My very first recipe on this blog was from the slow cooker. Then I gave mine away, moved countries, eventually got a new one I never used, and now I am dusting it off to more easily have dinner ready when we get home from a long day. Desperate to make it feel like fall even though the temperatures suggest we are in a summer heat wave right now, I thought of cooking some delicious pumpkin butter. But!!! I also had a ton of apples from our trees needing to get used up, so I threw them all in together with some spices, and out came deliciousness! Even though we are still blessed with beautiful summer sunshine here in the Bay Area, the rest of the Northern hemisphere is quickly gearing up for colder temperatures. And so my favorite soup season begins! Soups don't have to be complicated, and they also don't need to be filled with lots of cream to get the creamy texture you love. Often just using a little coconut or almond milk can go a long way, and I even have soup recipes that don't require anything more than your veggie of choice and some broth. Golden quinoa muffins

Honestly, I am looking for the fast and easy these days. I have no time, patience or energy to stand in the kitchen for hours every day to prepare super balanced and nutritious meals. I have always been a big batch cooker, but now I really try to put all my food prep into 2 days max, and then have just 15 minutes to throw meals together. That's why cooking grains neutrally and then adding them to different meals is so ideal for me.
