Mexican quinoa bowl

After all the treats from various Halloween parties, let's nourish our body with a comforting, grounding bowl filled with goodness. And the best part: it only takes 15 minutes to throw together! Perfect for a busy evening when dinner needs to be on the table ASAP. In case you are new to the blog, welcome! As you will notice in many recipes, I never just cook a grain or a bean for one recipe. I prepare these in bigger batches for the week, so that then throwing together wholesome meals is quick and easy. So you will often find "cooked grains or beans" as one of the ingredients. Know that you can always interchange a grain or a bean. So if you have a recipe calling for quinoa, but you have mil

Last week on Instagram I shared my journey with cancer, how my dad was diagnosed with cancer when I was pregnant with Baby Zand, how I dove into all the research around cancer and diet and lifestyle changes. I taught him everything I knew, and then shoved all of this to the back of my brain, hoping that I wouldn't need it again. Cancer has hit again in our closest circle, and again I am diving into tons of exciting research. I asked you if you wanted to know this information, and you all said yes! So here we are. On Insta Stories the daily health tips this week will all be around cancer; cancer prevention and also how to make diet and lifestyle changes that can go hand in hand with conventio

Spiced pumpkin and apple butter from the slow cooker

My very first recipe on this blog was from the slow cooker. Then I gave mine away, moved countries, eventually got a new one I never used, and now I am dusting it off to more easily have dinner ready when we get home from a long day. Desperate to make it feel like fall even though the temperatures suggest we are in a summer heat wave right now, I thought of cooking some delicious pumpkin butter. But!!! I also had a ton of apples from our trees needing to get used up, so I threw them all in together with some spices, and out came deliciousness! So here we go :-) Preparation time: 15 minutes Slow cooker time: 6 hours 1 medium sized sugar pie pumpkin or pumpkin of your choice (makes about 5-6 c

Cream of shiitake

Even though we are still blessed with beautiful summer sunshine here in the Bay Area, the rest of the Northern hemisphere is quickly gearing up for colder temperatures. And so my favorite soup season begins! Soups don't have to be complicated, and they also don't need to be filled with lots of cream to get the creamy texture you love. Often just using a little coconut or almond milk can go a long way, and I even have soup recipes that don't require anything more than your veggie of choice and some broth. The creaminess comes from blending it to creamy perfection. In this beautiful cream of shiitake the mushrooms are the highlight, coconut milk gives it a little extra creamy kick, and if you

Golden quinoa muffins

Honestly, I am looking for the fast and easy these days. I have no time, patience or energy to stand in the kitchen for hours every day to prepare super balanced and nutritious meals. I have always been a big batch cooker, but now I really try to put all my food prep into 2 days max, and then have just 15 minutes to throw meals together. That's why cooking grains neutrally and then adding them to different meals is so ideal for me. In this case, I use leftover quinoa (cooked without salt or broth) to this muffin dough, and I've got myself a super nutritious breakfast option that requires no cooking or messing up the kitchen in the morning. Give these muffins a try, I am sure you will love th

Book of the month: October

"In addition to autism, we have seen exponential rises in other brain-related problems among children, including attention deficit disorders, anxiety, and depression. While genetics are part of the equation, I believe that we are poisoning our children’s brains at a time when they are most vulnerable, a time when they are developing rapidly, exposing them both to untested chemicals and to known neurotoxins.” Let me start this month’s book review with saying that I am not against vaccines, nor is this book, clearly with the title “vaccine-friendly”. If you would like to unfollow me for bringing up this topic, then please go ahead, that is your right. If you want to learn more about how to m
