Sour mint dressing

Often you don’t feel like eating much more than a salad during the hot summer. But towards the end of the summer you are becoming slightly bored with your go to dressings? Then look no further. Make your next basic green side salad a whole lot more interesting with this sour mint dressing. It’s so fresh and clean, I love how it makes me wake up instantly! If you are not too keen on an extreme sour taste, just add a bit extra agave or liquid sweetener to the dressing.

Preparation time: 3 minutes

For 1 main serving or 2 side servings:

  • ¼ cup mint leaves, tightly packed

  • 4 Tbsp lemon juice

  • 3 Tbsp extra virgin olive oil

  • 1 Tbsp raw honey (or other liquid sweetener of your choice)

  • freshly ground black pepper and sea salt

  1. Put all ingredients in a food processor and process for 1.5 minutes at high speed until a green dressing has formed.
