
Fall season, apple season! How do you like to eat your apples? I always carry one in my bag as a quick snack on the go. I love apples grated into salads as a sweet surprise, I add them to soups like this carrot ginger soup, and they are part of my breakfast as soon as the season begins. This muesli is a super quick, oat free breakfast. You don't even need to measure the ingredients, you can just kind of use a handful of each, throw it in the food processor, and done. If you don't like your breakfast too sweet, you can omit the date or switch your apple to a green apple instead. I enjoy my muesli with coconut yogurt made from fresh coconut milk. I also use the muesli as a topping of my regular oatmeal.
Preparation time: 5 minutes
Makes 1 serving:
1 Medjool date
½ an apple, cored (use green if you don't like it very sweet)
¼ cup desiccated coconut
¼ cup pecan nuts
1 Tbsp flaxseeds
pinch of ground cinnamon
Place all ingredients in a food processor and pulse 1-2 times until you have a crumbly texture. That's it! :-)
Serve with your favorite dairy or non-dairy yogurt.
