So I have been trying to figure out snack time for Baby Zand. Since we have 3 meals a day all sorted, I now want to transition from the mid day feeds to real snack times.
Breast feeding can be convenient, but Baby Zand is not highly into it anymore anyways. Perfect time to completely wean her! So I have been playing around with multiple options from smoothies, to fruit snacks, to hummus with veggies, and one day I discovered she loves peanut butter - I mean seriously she is so in love with it that it was in her hair, her ears, on her diaper, just everywhere. Needless to say, the last few days snack time has been fruit slathered in peanut butter. I wanted to come up with something new and different, and while she was chomping away on the plums covered in peanut butter it hit me: those two should get married and make a delicious fall flavored peanut butter! Tada, this recipe was born.
And don't worry, you don't need a baby to have an excuse to make this recipe. I have topped my morning oatmeal with the peanut butter, mixed it into smoothies, and had it as a snack with these apple sandwiches.
A quick note for all you baby led weaning fans out there: if you are making this for your baby, don't use honey, but try maple syrup instead or leave the extra sweetener out all together.
Preparation time: about 1 hour
Makes 1 cup:
2 plums (fit in the size of your palm)
½ cup peanut butter
1-2 Tbsp raw honey (or maple syrup - see note above for babies)
½ tsp cinnamon
Pre-heat the oven to 175ºC/ 350ºF, and line a baking tray with parchment paper.
Slice the plums in half, take out the stone, and place them with the cut side down on to the baking tray. Roast for 45 minutes until soft and juicy.
Place the plums in the food processor or blender, add the rest of the ingredients, and process for 30 seconds - 1 minute until creamy and smooth. Adding honey depends on how sweet you like it, and how sweet your plums are.
Store in a jar in fridge for up to 2 weeks.
Bonus note: If you are feeling very adventurous, try making your own peanut butter - it will change your life! The flavor is far superior to anything you can buy.
Homemade peanut butter
Preparation time: 30 minutes
Makes 1 ½ cups:
- 3 cups peanuts
Pre-heat oven to 175ºC/ 350ºF.
Spread peanuts on a baking tray, and roast for 20 minutes.
Cool down for a few minutes, then transfer to a food processor, and process for 2 minutes or longer until creamy.
If you have a Thermomix, weigh in 400g/ 14oz of peanuts, and after roasting process on speed 8 for 10 sec to grind, then blend on speed 5 for 2 minutes.
