
I am sure by now you know how obsessed I am with my homemade coconut milk. I make huge batches of this every week, and we have it in everything, from breakfast oatmeals to turmeric coconut lattes, and coconut chia puddings.
I have not bought a single box or can of coconut milk in months, because I can't stand how processed it tastes. And now this winter I have created another coconut milk drink to warm me up on these cold, rainy days: the ginger honey coconut milk. Think of it as a grown up version of a sleepy potion. As a child you may have had a warm cup of milk to help you settle down in bed... now try this, so much better, and dairy free!
Preparation time: 10 minutes
Makes 1 serving:
one thumb sized piece fresh young ginger, peeled
1 cup coconut milk (try this homemade one!!!)
1 tsp raw honey
In a blender or food processor, process the ginger and coconut milk on high until creamy without any stringy bits and pieces.
Pour the ginger milk in a small saucepan, and heat gently over medium heat. Do not boil, just heat for about 5 minutes, stirring constantly.
Add the honey, whisk, and enjoy right away.
