Orange cardamom balls


Oooh, we received our first oranges in our organic food box delivery this week, and I am sooooo excited! Orange and tangerine season is here. It is the delicious pre-season to Christmas treats. Pair the orange with cardamom, and you have got yourself a fabulous little fall/ wintery snack!

Preparation time: 15 minutes

Makes 20 balls:

- 1 cup raw almonds (bonus point for soaking and drying them first, but who has time for that?!?)

- 4 Medjool dates

- zest of 2 oranges

- 1 ½ Tbsp orange juice

- ¾ tsp ground cardamom

- pinch of sea salt

  1. Start with the almonds in the food processor. Process on high until you have almond meal. Be careful to not over-process, it can turn into almond butter very quickly! I would say, it takes about 5-15 seconds to grind the almonds depending on the power of your food processor.

  2. Add all the other ingredients, and process on medium speed for 15 seconds until you have a sticky dough. If the dough is too dry, add another spoon of orange juice.

  3. Now take dough one teaspoon at a time, and roll into a ball.

  4. Place in fridge, where the balls will firm up slightly. They will keep well in the fridge for up to 2 weeks.
