Holiday egg nog and peppermint hot chocolate

Sweet drinks during the holiday season are my downfall! I used to love everything holiday flavored at Starbucks. I hate coffee, but I would endure it for the sake of all the holiday cheer. Of course once you start to look into it, you are shocked at the synthetic ingredients of most holiday flavored products - not just drinks. High fructose corn syrup, refined oils, artificial flavors and colors are pretty much everywhere. That clearly does not make for a healthy or happy holiday season. Bloat galore, skin breakouts, extreme mood swings, and a growing waist are all side effects I can live without. That's why I now follow all my holiday rituals, and still enjoy what I really want to enjoy. Check out the "Surviving the Holidays" ebook for all my tips.

Over the years I have created my own versions of my favorite holiday drinks. Egg nog and peppermint hot chocolate were at the top of my list when I first started to make healthier swaps in my life, and they are still my favorite. Try them, and let me know what you think!

Egg nog

Preparation time: 10 minutes

Soaking time: 2 hours or longer

Makes 2 servings:

  • 1 cup raw cashew nuts, soaked in water for 2 hours or more

  • 2 cups water

  • 5 Medjool dates, pitted

  • 1 tsp vanilla extract

  • 1/8 tsp ground nutmeg

  • 1/8 tsp ground cinnamon

  • pinch of ground cloves

  • pinch of sea salt

  1. Drain and rinse the cashew nuts well.

  2. Place all ingredients in a powerful blender, and blend for at least 2 minutes until super creamy. Adjust spices for taste.

  3. Heat gently in a small saucepan - do not bring to a boil - and serve right away.

P.S.: feel free to add a splash of rum to make this a grown up egg nog version :-)

Peppermint hot chocolate

Preparation time: 10 minutes

Makes 2 servings:

  • 3 cups coconut milk (make your own at home)

  • 14 fresh mint leaves (or a drop of essential peppermint oil)

  • 6 Medjool dates, pitted

  • 3 Tbsp raw cacao powder

  • 2 Tbsp maple syrup

  • 1 tsp vanilla extract

  1. Place everything in a blender, and blend for 1 minute until creamy.

  2. Heat gently in a saucepan for 5 minutes - do not bring to a boil - and serve right away.
