Green strawberry smoothie bowl


I know, I know. Last Thursday I said I was posting the last Valentine's Day recipe with the love bombs. I lied. There is one more. This is a super simple recipe that does not require any special superfood powders that may be hard to get for you. This is a super simple smoothie bowl made from strawberries, banana, spinach, and kale that you can serve tomorrow for breakfast, and everyone will love it! It's basically a green smoothie disguised as a full breakfast bowl. It's super versatile, because you can use whatever leafy greens you have in the fridge. If you don't have strawberries, use raspberries. I use my homemade coconut almond granola to top it, but again, use any granola or muesli you have. And if you are out of granola, add seeds and nuts as a topping. There are many ways to make this bowl super delicious, satisfying, and a quick breakfast option.

Preparation time: 10 minutes

Makes 1 serving:

- 1 banana (best if frozen overnight!)

- 5 strawberries including the green leaves (about 1 cup), fresh or frozen

- 2 kale leaves

- 1 cup packed spinach

- 1/4 cup water (you can also use coconut water, almond or coconut milk)

  1. Put all ingredients in a blender, and blend first on medium speed for 20 seconds, then on high speed for 40 seconds.

  2. Pour in a bowl, top with granola, nuts, seeds, anything you choose!

  3. To make the little strawberry hearts, cut out a reverse triangle at the top where the leaves are. Then slice the strawberry from top to bottom, and voila!
