I don't post a lot of recipes with strawberries, because I am allergic to the pesticides on strawberries. Even some organic ones cause me to break out in an extreme rash. I do LOVE strawberries, and when I find some good ones, then I will make everything with strawberries until they are gone. These strawberry and cream bites are an absolute dream for this strawberry season. They are sweet and fruity and creamy and light all in one bite. Make sure to read the coconut instructions closely, it can get confusing with so much coconut flying around :-). Of yeah, if you don't like coconut, you will very likely not enjoy these balls, so don't waste your time. Try some other delicious balls instead like these orange cardamom balls or chocolate peanut butter balls.
Preparation time: 15 minutes
Makes 20 bites:
2 1/4 cups desiccated coconut
1 cup raw cashew nuts
1 cup fresh strawberries
1/4 cup maple syrup
1/4 cup virgin coconut oil, melted
1/2 Tbsp vanilla extract (make your own, so easy, so cheap!)
pinch of sea salt
Start with 1 1/4 cups of desiccated coconut (keep the other 1 cup on the side). Grind the 1 1/4 cups in a food processor until a coconut meal forms. Take away 2/3 cups of ground coconut, and place on a plate to roll the bites in later on.
Add cashew nuts, strawberries, maple syrup, coconut oil, vanilla, and salt, and process until your have a smooth batter.
Add the cup of intact desiccated coconut to make the dough formable.
Take 1 Tbsp of dough at a time and roll in your hands.
Then roll in the coconut meal on the plate, and set aside.
Repeat until you have 20 bites (or less if you are eating the dough while rolling because it's so addictive :-)). They will keep well in the fridge for 5 days.
