
Summer is starting to fade, I can just tell! The sun rises later in the morning while I am exercising, in the evenings I need a sweater, and our veggie garden is starting to empty out. But summer BBQs are still abundant in our back yard, and this mango slaw is super simple to throw together for a crunchy, fresh side. You can make big portions of this, and prepare it a few hours ahead of time if you have a big party coming up. Just keep it in the fridge to let it marinate.
Preparation time: 5 minutes
Makes 1 serving:
2 spring onion, finely chopped
1/4 small head cabbage, thinly sliced
1/2 cup mango, chopped
1/2 cup cilantro (stems and leaves), finely chopped
1 Tbsp black sesame seeds
1 1/2 Tbsp extra virgin olive oil
1 Tbsp freshly squeezed lemon juice
1/2 Tbsp apple cider vinegar
sea salt and freshly ground black pepper
Combine all ingredients in a big bowl. Use your hands to toss the salad.
You can either serve it right away or let it marinate in the fridge for 15-30 minutes.
