The first of the homemade gift recipes is here, and it's so delicious: a Christmas granola that you can whip up quickly and in big batches. It is definitely a crowd pleaser with all the Christmas spices coupled with dried cranberries and maple. And even if you don't make it as a gift, it is fabulous to have at home for this season!
Preparation time: 40 minutes
Makes 4 cups (2-3 gift bags):
1/2 cup maple syrup
1/4 cup melted virgin coconut oil
2 tsp ground cinnamon
1 tsp vanilla extract
pinches each of ground all spice, cardamom, cloves, coriander, ginger, and nutmeg
2 cups rolled oats
1 cup slivered almonds
1/2 cup dried cranberries (ideally sweetened with apple juice instead of sugar)
Pre-heat oven to 175°C/ 350°F, and line a baking tray with parchment paper. Set to the side.
Combine maple syrup, oil, and all the spices in a bowl, and whisk until well combined.
Add the oats and almonds, and stir until everything is coated.
Spread the mixture on the baking tray.
Bake for 25 minutes until crunchy. Let it cool off to harden more.
Once cooled, break apart bigger pieces, and stir in the cranberries.
Keep in an air tight container for up to 2 months.
