Stress Less Holiday Advent Calendar


Welcome to Day 11 of the Stress Less Holiday Advent Calendar. Today we are going to cook together to nourish your body from the inside out. I know this is a busy time and cooking nourishing food often gets neglected. The easiest thing you can do is to make the same or very similar meal every day for the meals that you do have at home using some prepped ingredients. This way you can throw together a nourishing bowl in less than 10 minutes. Watch the video and cook along.

All you need for one serving is


  • 1/4 onion, roughly chopped

  • 1 Tbsp extra virgin olive oil, virgin coconut oil, cold-pressed sesame or avocado oil

  • 1 zucchini, roughly grated

  • 1 carrot, roughly grated

  • 1/2 tsp ground cumin

  • 1/4 tsp ground turmeric

  • pre-cooked grain (I use brown rice) - about 1/2 cup to 3/4 cups

  • pre-cooked or canned, drained, and rinsed beans (I use pinto beans) - about 1/2 cup to 3/4 cups

  • 1-2 Tbsp coconut amino (or tamari or soy sauce)

  • handful cilantro/coriander, roughly chopped

  • extras: sauerkraut, kimchi, pickled ginger or other yummy additions you have in the fridge

  • lemon

  1. Add onion and oil to a large pan over medium-high heat. Let brown for a couple of minutes.

  2. Add the zucchini and carrots, and stir everything.

  3. Add cumin and turmeric and let everything cook a few minutes.

  4. Add rice and beans together with 1/2 cup of water, and let the water cook away. Stir to let the rice and beans evenly heat up.

  5. Add the coconut aminos and stir so everything is coated.

  6. Plate the stir fry, sprinkled with cilantro/coriander, top with extras, and squeeze over a little bit of lemon.
