Immune boosting energy balls


All week long I am sharing #selflovejanuary rituals around boosting your immune system over on Instagram and Facebook stories. Today's ritual is all around switching out your afteronon snacks to support your immune system, and these energy balls are just perfect for that!

Every single ingredient in this ball is a immune booster by itself and when you put them together it's like a superhero. I try not to use powders often for the recipes here, as I like to show you how you can use regular ingredients as much as possible. For these energy balls I do use açaí powder which is an incredible anti-oxidant and it makes the balls so shiny and purple. Give the recipe a try. You can keep leftover açaí powder in the fridge and make açaí bowls out of it.

Preparation time: 10 minutes

Makes 12 balls:

  • 1 cup pistachio nuts

  • 2 Tbsp raw honey

  • 1 1/2 Tbsp açaí powder + 1 Tbsp for rolling the balls in

  • 1 Tbsp orange juice

  • 2 tsp lemon zest

  • 1 tsp orange zest

  1. Place all ingredients in the food processor (except hte extra 1 Tbsp açaí powder) and process until a sticky dough has formed.

  2. Roll 1 teaspoon of dough at a time in between your hands into a ball, and then roll the ball in the açaí powder.

  3. They will keep in the fridge for up to 1 week.
