Sometimes you're just too lazy or too busy in the mornings to make breakfast. So you end up running on coffee all day, cranky, hungry, and feeling like you're running at half battery level. That's not fun! Breakfast can fuel you for the rest of the day, can curb cravings that might hit you in the afternoon or evening otherwise, and you feel more motivated to take care of yourself.
The solution: make breakfast the night before, put it in the fridge, and you're ready to go the next morning with these super yummy overnight oats.
Preparation time: 5 minutes
Makes 1 serving:
1 cup coconut milk
1/2 cup chopped mango
1/2 cup raspberries
1/4 cup rolled oats
2 Tbsp chia seeds
Toppings: raspberries, maple syrup, or honey
Blend coconut milk, mango, and raspberries until creamy.
Stir in the oats and chia seeds, then cover and put in fridge overnight.
Serve with extra raspberries or a drizzle of maple syrup or honey.
