Creamy raspberry smoothie

I don’t often make smoothies that are not green, because I believe we usually have enough sweetness in our lives, and that we need more leafy greens to make it through the day with enough energy. This creamy raspberry smoothie is my favorite exception to this rule! It’s so smooth and creamy and almost feels like a dessert. The combination of the fats in the nuts and the fiber of the dates helps to prolong the digestion and sugar rush of the smoothie, fueling you for many hours. I often make this as an afternoon snack if, especially if I am running around all day without enough time to properly fuel myself. 

 

Preparation time: 5 minutes

Makes 1 serving: 

 

- 1 cup frozen raspberries

- ⅓ cup raw cashew nuts

- ¼ cup cold water

- 2 dates, pitted

- 1 tsp vanilla extract 

 

Place all ingredients in the blender and blend for 2 minutes until completely creamy, and no chunks of nuts are left.
