Hemp seed energy balls

Energy balls of any kind are my go-to snack when I am running around all day. They work well as a snack, last minute breakfast, and dessert if you are craving something sweet. In this variation, the sweetness of the figs should be enough, but if for some reason you would like the balls sweeter, mix one tablespoon of your favorite liquid sweetener (honey, maple syrup, agave, etc) into the dough. Also feel free to add some vanilla or cinnamon for extra flavor. 

 

Preparation time: 15 minutes

Makes 20 balls: 

 

- 1 cup walnuts

- 1 cup dried figs, stems cut off (about 5-6 pieces) 

- ⅓ cup hemp seeds

 

  1. Process the walnuts and figs in a food processor until a dough starts to form. This can take up to 30 seconds. When you squeeze the mixture, it should stick. If that is not the case, add one teaspoon of water and process again. 

  2. Place the hemp seeds on a plate. 

  3. Take one teaspoon of dough at a time and roll it in between your hands to form balls. Then roll the balls in the hemp seeds. Done! The balls will keep in the fridge for up to 1 week if you can resist.
