Vanilla pear chia pudding

The second Valentine's Day recipe for this year is here! A silky smooth chia pudding with fruity pears, and lovely vanilla. Chia seeds are an amazing beauty food. With their omega 3 fats they make your skin super smooth and glowing. And what better way is there to celebrate some self love this Valentine's Day? 

It comes together quickly, and just needs to rest for 15 minutes, while you sit down and scroll through your social media feed, clean out the cat litter box, or go and have a shower - yup, these are all things I do while waiting for my chia puddings :-) 

 

Preparation time: 20 minutes

Makes 1 big serving or 2 small ones: 

 

- ½ pear, cored

- ¾ cup coconut milk 

- 1 tsp raw honey 

- ½ tsp vanilla extract (find the homemade recipe here!) 

- ¼ cup chia seeds

 

  1. Blend the pear, coconut milk, honey, and vanilla extract in a blender on high until super smooth and creamy. Try it, isn't it heavenly? 

  2. Transfer the pear mix to a bowl, stir in the chia seeds, and let sit for 15 minutes. 

  3. Share with a loved one or devour the whole bowl yourself.
