As a child, I was super fortunate to travel the world with my family. One of the exotic locations we went to for holidays was Bali. It was a short hop over from Hong Kong, where we were living at the time, and a prime holiday destination to get some sunshine, beach, and relaxation. And while we visited beautiful temples, met super kind people, and had a wonderful family time, the thing that stuck with me the most was this banana coconut soup like thing that was served for breakfast or dessert. It was so exotic tasting unlike anything I had ever had before. That was the moment I started a life long love affair with coconut - because if you have followed this blog for a while, you know how obsessed I am with my homemade coconut milk, and how I use it for EVERYTHING!
Last month, my whole family got together for a big holiday in Bali. This was the moment I had been longing for for so long. I could finally figure out what this banana coconut soup was, and how to re-create it! The chef at the villa we were staying at was so wonderfully knowledgeable, and she kindly passed her recipe on to me. I went in, changed out the sugar for honey, and made it my own! So here is the most delicious coconut dessert you will ever have. I am addicted to this at the moment, and have it on most days as my afternoon snack or on my oatmeal in the morning. If you try it, please let me know how you like it. Is it really that good or am I just crazy?!
Preparation time: 10 minutes
Makes 2 servings:
- 1 banana, peeled and sliced
- 1 cup coconut milk
- 1 Tbsp honey
- pinch of sea salt
Combine all Ingrediens in a small saucepan, and over medium heat while stirring, bring to a simmer.
As soon as it starts to simmer, pull it off the stove and serve. That's it! You can keep leftovers in the fridge, it will still taste amazing cold!
