If you celebrate Thanksgiving, you will already be knee deep in shopping, cooking, and hosting mode... unless you are lucky enough to be invited to someone's house and can just show up ready to eat :-). Either way I think a little extra leafy green nutrition is due this week when we are all sure to go overboard with our foods and drinks. And if you are busy cooking, why not take some of those fresh cranberries meant for your cranberry sauce, and throw them in the blender with some fruity mango and leafy spinach to give you an extra energy kick?
Preparation time: 5 minutes
Makes 1 serving:
- 1 1/2 cups spinach leaves
- 1 1/4 cups chopped mango (best if frozen overnight, but totally ok if you didn't see that instruction before :-))
- 1/2 cup fresh cranberries
- 3/4 cups water
Blend all ingredients in a blender for 1 minute until creamy.
