Pumpkin spice energy balls

These balls are a life saver when it comes to needing quick energy on the go. I don't often suggest this as a healthy habit, but let's be realistic here; all of our to do lists are endless, and we don't have enough time to eat and get things done. So make these balls ahead of time for the entire week, and you can use them as a breakfast substitute, as snack for mid morning or the afternoon low. Baby Zand loves them as well, so they are often featured in her lunchbox at the moment. The ingredients are super easy to find, and if you can't get your hands on pecan nuts, walnuts will be a good substitute. You can also use a ready made pumpkin spice mix - about 1 1/2 Tbsp of it. 

 

 

Preparation time: 10 minutes

Makes 20 balls: 

 

- 1 cup raw pecan nuts

- 1/2 cup Medjool dates

- 1 1/2 tsp ground cinnamon 

- 1 tsp ground ginger 

- a pinch each of ground nutmeg, all spice, and cloves

 

  1. Process all ingredients in a food processor on high until a sticky dough forms. 

  2. One teaspoon at a time, roll the dough between your palms into a ball. 

  3. Place balls in fridge, they will keep there for up to one week.
