Winter time is cold and uncomfortable to most of us, and all we want to do is go into a long sleep. And sleep should definitely be on the top of your list to make it through these next few months. Plus you can add a few warming ingredients to your daily meals and snacks to warm you from the inside. Ginger is one of my favorite spices - ground or fresh - that brings warmth from the inside out. Try this creamy carrot ginger soup with cashew apple crunch, warming spinach pumpkin dahl or nourishing ginger honey coconut milk.
With this new recipe, you will get a jump back into your step, and feel energized to get things done. The energy balls just combine three ingredients: walnuts, apricots, and ginger. Simple, easy to find ingredients that you can combine to make energy balls for the next 2 weeks. Recipes don't get much easier than this!
Preparation time: 10 minutes
Makes 30 balls:
- 2 cups raw walnuts
- 2 cups dried apricot (preferably without sulfur if you can find them)
- 2 tsp dried ground ginger
- 1 Tbsp water
Start by placing the walnuts, apricot, and dried ginger in a food processor, and process until completely ground down.
Add 1/2 Tbsp of water first, and process again. See if the dough is sticky enough, otherwise add another 1/2 Tbsp of water again. When you pinch the dough, it should stick together.
Take one teaspoon of dough at a time, and roll in between your hands to form a ball.
These balls will keep in the fridge for up to 2 weeks.
