It's that time of the year again when I make my favorite treats into healthier versions! Have you checked out some of the previous year's yumminess?
This year it's all about the pumpkin. I've got two delicious recipes for you, one today, and one coming on Thursday, so make sure to check back in! This is a fall version of a rice crispy treat with pumpkin, pumpkin spices, and chocolate chips. You will not be disappointed!!!
Preparation time: 10 minutes + 1 hour resting time
Makes 12 squares
3/4 cup pumpkin puree (I make my own by steaming and pureeing or you can use canned)
1/2 cup melted virgin coconut oil + extra for greasing the dish
1/3 cup maple syrup
1/4 cup almond butter
1/4 tsp sea salt
1/2 tsp ground cinnamon
1/2 tsp ground ginger
2 pinches of ground cloves
Take a square dish about 23x23cm/ 9x9 inch, and grease it with coconut oil.
Combine all the wet ingredients in a blender or food processor and blend until smooth.
Stir in the dry ingredients.
Pour batter into greased dish, even out the top, and put in fridge to harden for at least one hour or overnight.
Cut into squares and enjoy! You can keep it in the fridge for up to 1 week, but the rice will become softer. Still delicious, just not as crispy :-)
