Gooey chocolate mug cake

Valentine's Day is getting closer, and today I've got the easiest recipe ever for you! You can literally stir everything inside the same mug that you also bake this gooey chocolate goodness in. It's super rich and satisfying in a perfect serving. Try this recipe right away, and serve it to all your loved ones for Valentine's Day. And you won't be sorry if you serve it with ice cream (this is my favorite non-dairy one) :-). 

 

 

Preparation time: 30 minutes

Makes 1 serving: 

 

  • 1/2 cup water

  • 2 Tbsp coconut butter (or almond butter, but not coconut oil!) 

  • 2 Tbsp maple syrup 

  • 2 Tbsp oat flour (or other flour of your choice)

  • 1 1/2 Tbsp cacao powder

  • 2 tsp baking powder 

  • 3 Tbsp roughly chopped good quality dark chocolate 

 

  1. Pre-heat oven to 175°C/ 350°F. 

  2. Mix together the water, coconut butter, maple syrup, oat flour, cacao powder, and baking powder until a smooth batter has formed. You can stir this either in the mug you will be baking in or you can whisk it separately. 

  3. Stir in the roughly chopped chocolate. 

  4. Bake for 25 minutes. It will be hard on top, and gooey in the middle. 

  5. Serve with ice cream, fresh berries, chopped nuts, or cacao nibs.
