Tomato fig salad with garlicky balsamic vinaigrette

The last of the summer produce is so good, and I am I love with everything tomato right now! My absolute favorite ones are the Early Girl tomatoes, but if you can't find them, you can always use regular tomatoes or sweeter cherry tomatoes. The figs make the salad super interesting, and you can use any figs you want - even dried ones if you can't find fresh ones.

Tomato salsa

Preparation time: 5 minutes

Makes 1 serving:

 

  • 4 Early Girl tomatoes or 2 regular tomatoes, chopped

  • 3 Mission figs, chopped 

 

For the dressing: 

  • 3 basil leaves, finely chopped 

  • 1 garlic clove, minced 

  • 1 spring onion, finely chopped 

  • 1 1/2 Tbsp extra virgin olive oil 

  • 1 Tbsp balsamic vinegar

 

  1. Whisk together all the ingredients for the dressing in a bowl. 

  2. Add the chopped tomato and figs to the bowl, and toss well. Done. Eat.
